Clients require me to share who has interviewed in addition to what a candidates current status is. I use a "stage" and "status" report in exel to do this. Can we automate it by keeping a "stage field" of who made it to submittal/interview stage in addition to their current status?

We seem to have missed this. You may be able to achieve your desired outcome by using a Custom Field assigned at the person level. It would not be project specific and wouldn't work if you have candidates on multiple projects at the same time.
